2 1/4 Cups Walnuts or Pecan Nuts (activated)
1/3 Cup Cacao Powder
1/4 tsp Salt
3/4-1 Cup Dates, deseeded and chopped
1/4 Cup Cacao Nibs
1/3 Cup Raisins
VANILLA MACA SORBET:
3/4 Cup (100g) Cashew Nuts, soaked
3 Cups + 1/3 Cup Nut Milk of your choice
5-6 Tbsp Liquid Sweetener
1 tsp Vanilla Extract
2 tsp Maca Powder
1 Vanilla Bean
Pinch of Salt
Mix all ingredients and freeze
Process 2 cups walnut, cacao, salt, vanilla and cherry extract in food processor to a powder. Add dates while processing until evenly combined. Add 1/4 cup walnuts, cacao nibs and raisins to process until well mixed but still chunky.
Press into a lightly greased container. Place in the fridge for a few hours or to set. Cut into bite-size pieces.
Serve with chocolate ganache and Maca sorbet.
